Pretzel Dough


1#5oz. bread flour

  1. eggs
  2. butter
  3. 1 cup milk

2 tsp.  salt

  1. 2oz. sugar
  2. fresh yeast (2 ½ tsp. dry instant yeast)



  1. Mix egg, milk, sugar, and yeast. Whisk to incorporate.
  2. Add flour and salt. Mix with dough hook 5 minutes, 1st
  3. Add butter. Mix 5 minutes, 2nd
  4. Portion dough 4 oz. ea. for each pretzel.
  5. Shape and place on lined sheet pan.
  6. Proof, brush with egg wash and sprinkle with coarse kosher salt. Bake until golden brown.
