1#5oz. bread flour
- 1 cup milk
2 tsp. salt
- 2oz. sugar
- fresh yeast (2 ½ tsp. dry instant yeast)
- Mix egg, milk, sugar, and yeast. Whisk to incorporate.
- Add flour and salt. Mix with dough hook 5 minutes, 1st
- Add butter. Mix 5 minutes, 2nd
- Portion dough 4 oz. ea. for each pretzel.
- Shape and place on lined sheet pan.
- Proof, brush with egg wash and sprinkle with coarse kosher salt. Bake until golden brown.
