HAMPTON ROADS, Va. - While trying to prepare meals for their families during the COVID-19 pandemic, many people are running out of ideas! Chef Jacqui joins us with a few easy dishes that can be made right at home and offer a variety of different flavors.
Chicken Noodle Soup:
1 tbsp olive oil
1 cup chopped onion
1 cup baby carrots, halved width wise
1 cup sliced celery
1 tbsp chopped garlic
1 tsp salt
½ tsp pepper
6 cups chicken stock
2 cups cooked noodles – shape of our choice
2 ½ cups shredded chicken
In a large stock pot, saute the onion, carrots, celery, and garlic in the olive oil over medium heat for 8-10 minutes. Add the chicken stock and bring to a boil. Lower the heat to a simmer and cover. Cook until the carrots are fork tender. About 15 minutes. Uncover and add noodles and chicken. Season with salt and pepper to taste.
